Food
Guilin is home to multi-ethnic groups; hence the city has a rich variety of local delicacies. Guilin cuisine is a combination of Hunan and Cantonese cuisines, which means it serves not only dishes with spice and chili, but also emphasize on freshness and use of selected sauce. Some famous Guilin local dishes and snacks are listed below.
Guilin Rice Noodles
The noodles of Guilin are famous throughout China and can be found in places such as Shanghai and Hong Kong. Of course for the most authentic Guilin Rice Noodles, visitors must eat them in Guilin. It is a staple of Guilin people's diet and is a wonderful and cheap dish. During meal times the many small rice noodle restaurants are always packed with diners. The rice noodles are made from oil and rice flower. The noodles are cooked in broth and served in a bowl of soup made from pork, beef, garlic, peanuts, peppers, and radishes. The peppers are added by the diner, so visitors who do not like spicy food can simply not add it.
Beer fish
The dish was first created in Yangshuo (64 km south of Guilin). Mixed with other ingredients, fish is stewed with beer, which forms very delicious gravy in the pot. It has become the No.1 dish in Yangshuo. Every year there is a beer fish contest in town for the best taste prepared by the chefs.
Lipu Taro Pork
This is mainly made from pork, Lipu taro and preserved bean curd. The Pork and taro are cut into cubes and fried individually. They are later steamed together until they are a golden brown color.
Lo Han Boiled Chicken
This dish is steamed with Chinese herbs such as milk vetch, Lo Han Kuo and Dang Shen. This dish is said to help people suffering from stress and high blood pressure.
Stewed Duck with Gingko
The main ingredients are duck meat (cubed), Gingko and slices of ham, which are steamed together. The finished dish is a light soup with tender duck meat complementing the gingko.
Shredded Meat with Osmanthus
Meat is shredded and then fried with scented osmanthus (which comes from the famous Osmanthus trees in Guilin) Osmanthus trees are particularly beautiful in autumn and the city derives its name from them.
Stewed Clams with Chicken
A porcelain pot is filled with clams, chicken, preserved longan, and covered and then cooked for two hours. This dish is said to be good for coughs and colds.
Steamed Pork with Rice Flour Wrapped in Lotus Leaves
The Pork is boiled and then stir-fried with soy sauce which has been dipped in mung bean flour. It is then wrapped in a lotus leaf and then steamed.
Oil Tea
The ethnic minorities of the region, including the Miao, Yao and Dong people, often enjoy Oil tea. It is renowned for its medicinal qualities. Many people throughout the area like oil tea especially Gongcheng oil-tea from the county, which is named after a county of Guilin.
Different Snacks Made of Glutinous Rice
Glutinous rice is widely used in Guilin. It can be made into ciba (rice paste), tangyuan (rice flour dumplings), nuo mi fan (rice dumplings), and zongzi (glutinous rice dumpling wrapped in a bamboo leaf). The stuffing varies, and may include sweetened bean paste, sesame powder, water chestnut powder, chestnut, lotus seed paste, peanuts, meat, or preserved ham.
Guilin Food Streets
In Guilin, there are six famous food streets for sampling the local cuisine: Binjiang Road Food Street (from Fubo Hill to Elephant Trunk Hill), West Jiefang Road Food Street, Putuo Road Food Street (intersection of Chaoyang Road), Guilin Food Town (200 meters left of Bus Station). Zhishan Road Food Street (opposite of Guilin Food Town), and Guilin People Mong kok Food Street (near the Central Square and bell tower).
